Role Description The Halwai CDP (Chef de Partie – Indian Sweets) is a full-time, on-site role based at Le Meridien Kochi in Ernakulam. The role involves planning, preparing, and producing high-quality Indian sweets and traditional desserts for buffet, banquets, and à la carte service, following hotel recipes and standards. The Halwai CDP will manage a designated section in the pastry/sweets kitchen, supervise junior team members, ensure proper mise en place, and maintain consistency in taste, presentation, and portion control.

Daily tasks include monitoring ingredient quality, managing inventory for the sweets section,



maintaining hygiene and food safety standards, and coordinating with the broader culinary team for special events and festivals. The role also includes contributing to menu development, testing new recipes, and supporting cost control and waste reduction initiatives.

Qualifications

- Strong experience in preparing a variety of Indian sweets and desserts, including traditional and regional specialties.
- Solid knowledge of culinary techniques, food safety, hygiene standards, and kitchen operations in a professional hotel environment.
- Ability to supervise and train junior kitchen staff, coordinate workflows, and work effectively within a diverse culinary team.
- Good organizational skills with attention to detail in taste, texture, and presentation, and the ability to manage time during peak operations.
- Prior experience as a Halwai, CDP, or equivalent role in a reputed hotel, restaurant, or confectionery; experience in a five-star property is an advantage.

- Basic education in culinary arts or formal training in bakery/confectionery is preferred, though equivalent hands-on experience will be considered.
- Willingness to work flexible hours, including weekends and holidays, and maintain professional conduct in guest-facing environments.
