About SOMARA

SOMARA is a premium contemporary restrobar in Lucknow built around a World Cuisine concept, bringing together authentic and contemporary dishes inspired by different countries and culinary cultures.

We are looking for an experienced Executive Chef – World Cuisine who can lead our culinary team and develop a distinctive international food programme for SOMARA.

Job Responsibilities

- Lead the complete culinary operations of SOMARA.
- Develop and curate a diverse World Cuisine menu featuring authentic and popular dishes from different countries.
- Research international cuisines, ingredients, cooking techniques and traditional recipes.
- Develop signature dishes and contemporary interpretations specifically for SOMARA.
- Maintain authenticity while adapting selected dishes appropriately for the Indian palate.
- Create standardised recipes, preparation methods, portion sizes and plating standards.
- Conduct menu trials, tastings and pre-opening kitchen trials.
- Manage food quality, consistency, presentation and hygiene across all kitchen operations.
- Recruit, train and lead the kitchen team.
- Establish kitchen SOPs and ensure strict implementation.
- Manage food cost, portion control, wastage and inventory.
- Work with procurement teams to source domestic and imported/speciality ingredients.
- Coordinate with management on menu pricing, profitability and menu engineering.
- Monitor guest feedback and continuously improve the culinary offering.
- Ensure smooth kitchen operations during daily service and special events.
- Maintain high standards of food safety, cleanliness and kitchen discipline.

Cuisine Exposure





Candidates with strong experience in multiple international cuisines will be preferred, including:

Italian | French | Spanish | Mediterranean | Mexican | American | Japanese | Korean | Thai | Vietnamese | Chinese | Indonesian | Malaysian | Middle Eastern | Contemporary Fusion

Strong expertise in a selection of these cuisines is sufficient; candidates are not expected to be experts in every cuisine.

Candidate Profile

- 8+ years of professional culinary experience, with relevant leadership experience.
- Previous experience as Executive Chef / Head Chef / Chef de Cuisine / Senior Sous Chef in a premium restaurant, restrobar, luxury hotel or similar establishment.
- Strong exposure to international/world cuisine.
- Proven experience in menu development and recipe standardisation.
- Solid understanding of food costing, kitchen operations and inventory management.
- Excellent leadership and team-management skills.
- Creative, disciplined and highly detail-oriented.
- Ability to develop new dishes while maintaining consistency and commercial viability.
- Strong understanding of food safety and hygiene standards.
- Culinary Arts / Hotel Management qualification preferred.
