About the Role
We are looking for an experienced Operations Head to lead the overall operational and commercial performance of our large-scale Central / Industrial Kitchen facility .
The role will serve as the key link between Head Office and the Factory , ensuring that business objectives, financial targets, production requirements, quality standards, manpower plans, and operational strategies are effectively implemented at the factory level.
The ideal candidate should have strong experience in P&L; management, EBITDA improvement, large-scale food operations, production management, cost optimization, manpower planning, supply chain coordination, and cross-functional stakeholder management .
Key Responsibilities
- Act as the primary operational interface between Head Office and Factory operations .
- Translate management objectives, business plans, budgets, and operational strategies into actionable factory-level plans.
- Provide regular updates to senior management on production, financial performance, operational challenges, manpower, quality, and key business KPIs.
- Coordinate with Finance, HR, Procurement, Supply Chain, Quality, Engineering, Sales, and other HO functions to ensure smooth factory operations.
- Drive timely resolution of operational escalations and ensure alignment between HO and factory teams.
- Take ownership of the Factory P&L; and EBITDA performance .
- Monitor revenue, production cost, raw material cost, manpower cost, utilities, logistics, wastage, maintenance, and other operating expenses.
- Identify cost-saving and productivity-enhancement opportunities to improve EBITDA and overall profitability .
- Review monthly financial performance against budget and identify deviations with corrective action plans.
- Work closely with Finance to prepare budgets, forecasts, variance analysis, and business MIS.
- Establish and monitor financial and operational KPIs for the factory.
- Develop and implement initiatives for cost reduction and operational efficiency .
- Control food/raw material wastage, production losses,
utility costs, overtime, manpower costs, and other controllable expenses.
- Monitor procurement and inventory practices to ensure optimum working capital utilization.
- Improve production yield and resource utilization through process standardization and operational controls.
- Lead senior factory and operational teams and ensure clear accountability across functions.
- Review manpower requirements, productivity, shift structures, and workforce deployment.
- Work with HR on recruitment, manpower planning, training, performance management, employee engagement, and disciplinary matters.
- Build a performance-driven culture focused on quality, productivity, cost, safety, and accountability .
- Ensure compliance with FSSAI, HACCP, GMP, food safety, hygiene, statutory, health & safety, and environmental requirements .
- Ensure implementation and adherence to operational SOPs and internal control systems.
- Monitor audit findings and ensure timely closure of corrective and preventive actions.
- Ensure business continuity and contingency plans are in place for critical operational risks.
Candidate Profile
- 12–18+ years of experience in operations leadership, preferably in large-scale food production, central kitchens, industrial kitchens, institutional catering, QSR, FMCG, food manufacturing, or similar businesses.
- Proven experience in managing P&L; and EBITDA for a large operational unit or business.
- Solid experience in HO–Factory coordination and cross-functional operations .
- Experience managing large teams and high-volume operations.
- Strong understanding of production, supply chain, procurement, inventory, quality, engineering, and manpower operations.
- Strong financial acumen with the ability to interpret P&L;, budgets, variance reports, cost structures, and operational MIS.
- Experience in cost optimization, process improvement, productivity enhancement, and operational transformation.
- Strong leadership, negotiation, analytical, and decision-making capabilities.
- MBA/PGDM in Operations, Finance, Supply Chain, or a relevant discipline will be an advantage.
