Roles & Responsibilities

1. Menu Planning & Engineering

- Design a practical, profitable takeaway menu suitable for the local Rourkela market
- Develop high-margin hero” dishes and balanced product mix
- Create detailed food costing and pricing strategy for every item

2. Recipe Standardization & SOPs

- Standardize all recipes with exact measurements, portion sizes, and preparation methods
- Prepare clear Standard Operating Procedures (SOPs) for cooking, packaging, hygiene, and station work
- Deliver a complete recipe book and kitchen SOP manual

3. Kitchen Workflow & Operations

- Design efficient kitchen workflow and station assignments for high-volume takeaway operations
- Optimize layout and process flow for speed, consistency, and minimal wastage
- Recommend equipment and small-wares requirements

4. Staff Hiring & Training

- Identifying and hiring suitable kitchen staff (cooks and helpers)
- Conduct hands-on training on recipes, SOPs, hygiene, portion control, and speed of service
- Define clear roles, responsibilities, and basic performance standards for the team

5. Additional Startup Support





- Advise on packaging solutions suitable for takeaway and delivery
- Guide on vendor/supplier selection for key ingredients
- Support a short soft-launch / trial-run phase
- Provide basic guidance on FSSAI hygiene and kitchen compliance standards

Mandatory Deliverables

Candidates must include a clear list of deliverables in their proposal. Expected deliverables include (but are not limited to):

- Complete Recipe Book (standardized recipes with costing)
- Kitchen SOP Manual
- Training Schedule & Training Completion Report
- Food Costing & Pricing Sheet
- Recommended Equipment / Kitchen Layout List
- Short Soft-Launch Plan

Requirements

- Proven experience as a Consulting Chef, Executive Chef, or Kitchen Consultant (preferably with takeaway, QSR, or cloud kitchen background)
- Solid knowledge of Indian and multi-cuisine takeaway operations
- Ability to create practical, cost-effective systems for a new startup
- Willingness to work on-site in Rourkela for training and setup phases
- Excellent documentation and communication skills
