Larder & Folk is an artisanal bakery and café in the heart of Panjim, Goa, founded in 2020. What started as a home bakery has grown into a 30-seater café, with a dedicated production kitchen and a close-knit team working across bakery, pastry and hot kitchen.
We care about good food, quality ingredients, consistency and the small details that make a guest experience memorable. Our kitchen is busy, hands-on and collaborative, with a strong focus on valuable systems, clean execution and teamwork.
The Role
We are looking for a Chef de Partie to join our Bakery team.
As a CDP, you will take ownership of your assigned section and be responsible for ensuring smooth preparation and service. You will work closely with the Head Baker and wider kitchen team to maintain the quality, consistency and standards of Larder & Folk.
Responsibilities
- Prepare breads, viennoiserie, sourdough, cakes, cookies, and other bakery products according to recipes and quality standards.
- Handle dough preparation, fermentation, shaping, proofing, and baking.
- Operate and maintain ovens, mixers, proofers, and other bakery equipment safely.
- Ensure consistent taste,
texture, appearance, and portion sizes.
- Follow food-safety, hygiene, sanitation, and HACCP procedures.
- Check the quality and freshness of ingredients before production.
- Assist with daily production planning and mise en place.
- Maintain cleanliness and organization of the bakery section.
- Minimize food waste and use ingredients efficiently.
- Coordinate with the pastry chef, kitchen team, and other departments to meet production requirements.
- Train or assist junior bakery staff when required.
- Monitor stock levels and report shortages or damaged ingredients.
