ONLINE QUALITY CONTROL EXECUTIVE – SEAFOOD PROCESSING

Job Purpose

To monitor product quality, food safety, labelling and packaging compliance throughout the seafood processing and packing operations, ensuring that products meet approved product specifications, customer requirements and applicable export regulations.

Key Responsibilities

- Conduct online quality checks at all stages of seafood processing, from raw material receiving through processing, packing, freezing/retort and dispatch.
- Monitor product parameters including size, weight, count, appearance, colour, texture, temperature, glazing, yield, trimming and other product-specific requirements.
- Verify that production is carried out as per approved product specifications, SOPs and customer requirements.
- Monitor CCPs and other critical quality and process parameters as applicable.
- Verify packaging materials and labels before and during production, ensuring the correct packaging, artwork, product description, ingredients, allergens, net weight, dates, codes, country of origin and other required declarations are being used.
- Ensure that the correct approved packaging and label are used for each product, customer and export market.
- Check packaging integrity, sealing, coding, printing, carton markings and overall packing quality.
- Verify that packaging and labelling are consistent with the latest approved specifications and artwork.
- Monitor hygiene, sanitation, GMP/GHP and personnel practices on the production floor.
- Identify and immediately report quality,



packaging or labelling deviations; segregate non-conforming products/materials and ensure corrective action.
- Maintain accurate online QC inspection records, check sheets, traceability records and deviation reports.
- Coordinate with Production and QA teams to resolve quality and packaging issues.
- Conduct finished-product inspection and sampling as per established procedures.
- Support customer, certification and regulatory audits.

Requirements

- Degree/Diploma in Fisheries, Seafood Technology, Food Technology, Food Science, Microbiology or related field.
- 2–5 years of experience in seafood processing/quality control, preferably in an export-oriented seafood processing plant.
- Valuable knowledge of seafood processing, HACCP, GMP/GHP and export quality requirements.
- Hands-on experience in online production-line quality inspection.
- Experience in verifying export labels, packaging materials and product artwork is strongly preferred.
- Good attention to detail, documentation and problem-solving skills.
- Willingness to work on the production floor and in shifts, if required.

Job Types: Full-time, Permanent

Pay: ₹20,000.00 - ₹70,000.00 per month
