- Monitor daily hygiene and sanitation standards across kitchen and service areas.
- Conduct regular hygiene inspections and identify non-compliance.
- Ensure proper cleaning and sanitization of equipment, utensils, workstations, storage areas and food-contact surfaces.
- Monitor personal hygiene, grooming and PPE compliance of staff.
- Ensure proper food storage, temperature control, labelling and FIFO/FEFO practices.
- Prevent cross-contamination and ensure proper segregation of raw and ready-to-eat food.
- Maintain hygiene checklists, temperature records, cleaning schedules and other required documentation.
- Conduct regular hygiene training and awareness sessions for kitchen and service staff.
- Coordinate with Operations, Kitchen and Quality teams to close hygiene-related issues.
- Identify food safety risks and take corrective and preventive actions.
- Support internal hygiene audits and client inspections.
- Ensure compliance with FSSAI, HACCP and company food safety standards.
- Report major hygiene violations and food-safety concerns to management.
- Ensure proper waste segregation and disposal practices.
Team Handling
- The candidate must be capable of managing a hygiene team effectively.
- Candidate should preferably bring/arrange their own experienced hygiene team along with them.
- Responsible for allocating duties, monitoring performance and ensuring proper manpower deployment.
- Train and guide team members to maintain required hygiene standards.
- Ensure the entire hygiene team follows company SOPs and reporting procedures.
