ABOUT SGS FOODS

SGS Foods is a multi-brand food & beverage group based in Goa, operating NH17 Culture & Cuisine (a highwaythemed full-service restaurant and bar), Kokni Kanteen (Goan heritage dining, with locations in Panjim and Arpora), Miso (an affordable, accessible Asian cloud-kitchen brand with club-member dine-in), and Catpro by Girish Desai (a catering brand). Catpro Gourmet is the group's central kitchen/commissary, producing standardised, pax-scaled recipes and semi-finished goods that are supplied across all outlets, catering operations & B2B customers.

ROLE SUMMARY

The Production Manager– Commissary will lead culinary and production operations at Catpro Gourmet, the group's central kitchen, overseeing recipe execution, food quality, and dispatch of goods to all brand outlets, catering assignments & B2B Clients. This is a hands-on, multi-brand role requiring the ability to run a centralized commissary at scale, coordinating with kitchen, purchase, and finance teams to ensure consistent, cost-effective, and timely production, while also bringing culinary leadership to new brand and menu development as the group expands.

Key Responsibilities

- Plan and schedule daily and weekly production based on outlet, catering, and B2B requirements.
- Lead production across multiple brands, ensuring consistent recipes, quality, portions, yields, and presentation.
- Ensure timely preparation, packing, storage, and dispatch of products to outlets and clients.
- Coordinate with Purchase on raw-material requirements based on production forecasts and consumption.
- Monitor inventory, production output,



stock movement, and material utilisation.
- Reconcile production output with purchase orders, vendor bills, and stock records in coordination with Finance and Purchase.
- Monitor food cost, yield, portion cost, wastage, and production variances; take corrective action where required.
- Ensure strict food safety, hygiene, sanitation, and quality standards across production, storage, and dispatch.
- Lead, train, and develop kitchen and production teams; prepare staffing plans and shift rosters based on production volumes.
- Monitor equipment, kitchen infrastructure, and facility hygiene to ensure smooth production operations.
- Maintain compliance with FSSAI and applicable statutory food-safety requirements.
- Prepare and report production, quality, cost, wastage, and operational performance metrics to management.
- Conduct recipe trials and support menu standardisation and scale-up in coordination with brand chefs.
- Contribute to new brand and concept development, including recipe ideation, menu planning, kitchen trials, costing, and production scale-up.

Requirements & Qualifications

- 5–8 years of experience in culinary/kitchen production operations,



with proven experience managing a central kitchen, commissary, cloud kitchen, or production facility supplying multiple outlets/brands.
- Candidates with only single-restaurant kitchen management experience may not be suitable.
- Strong understanding of centralised production planning, batch production, recipe standardisation, and pax-based scaling.
- Working knowledge of purchase processes, vendor coordination, inventory, stock reconciliation, and material planning.
- Experience with POS/inventory systems such as Petpooja or similar software will be an advantage.
- Strong people-management skills with experience handling kitchen/production teams and shift-based operations.
- Good understanding of food safety, hygiene, and commercial kitchen compliance requirements.
- Strong organisational and planning skills with the ability to manage multiple production lines simultaneously.
- Experience in monitoring food cost, yield, wastage, and production efficiency.
- Experience in menu development, recipe trials, or new brand/concept development will be an advantage.

Pay: Up to ₹90,000.00 per month
