Job Summary

Kargeen Restaurant is looking for an experienced and skilled Porotta Cook to join our kitchen team. The ideal candidate should have strong expertise in preparing traditional Kerala-style porotta with consistent texture, taste, and quality. Experience in preparing other Kerala breads is an advantage.

Key Responsibilities

- Prepare fresh Kerala-style porotta according to restaurant standards.
- Prepare dough, portion, stretch, layer, and cook porotta consistently.
- Maintain proper dough consistency and fermentation/resting time.
- Ensure porottas are soft, flaky, layered, and evenly cooked.
- Prepare other Kerala breads such as chapathi, wheat porotta, and similar items when required.
- Maintain proper mise en place before and during service.
- Handle high-volume orders efficiently during peak hours.
- Ensure consistency in portion size, quality, and presentation.
- Maintain cleanliness and hygiene of the porotta preparation and cooking area.
- Properly store and handle ingredients.
- Minimize food wastage and maintain portion control.




- Follow food safety and sanitation standards.
- Coordinate with the kitchen and service teams for timely order preparation.
- Maintain and clean cooking equipment and work areas.

Requirements

- Minimum 2–5 years of experience as a Porotta Cook or Kerala Cook.
- Strong expertise in traditional Kerala-style porotta preparation.
- Experience working in a busy restaurant or hotel kitchen is preferred.
- Knowledge of preparing other Kerala breads is an advantage.
- Ability to produce consistent quality during high-volume service.
- Good knowledge of kitchen hygiene and food safety.
- Ability to work independently and as part of a team.
- Physically fit and able to work for extended periods.
- Hardworking, punctual, and disciplined.
- Willingness to work versatile shifts, weekends, and holidays.
