Tandoor Chef (Commis / DCDP)

Location: Nksha, Mumbai
Reports To: Sous Chef / Head Chef

Role Summary

The Tandoor Chef is responsible for preparing and executing all tandoor dishes to Nksha's standards of quality, consistency, presentation, and food safety. The role requires expertise in Indian tandoori cooking, mise-en-place, service execution, and kitchen hygiene.

Key Responsibilities

- Prepare and cook kebabs, tikkas, breads, seafood, meats, and vegetarian tandoor specialties.
- Ensure consistency in taste, quality, portioning, and presentation.
- Execute daily mise-en-place and marination as per recipes and SOPs.
- Maintain cleanliness and hygiene of the tandoor section.
- Follow FSSAI, HACCP, FIFO, and food safety standards.
- Minimize wastage and ensure effective use of ingredients.
- Support smooth and timely service during peak operations.
- Assist with inventory management and stock counts.
- Collaborate effectively with kitchen and service teams.

Requirements

Commis





- 1-3 years of experience in a tandoor section.
- Basic knowledge of Indian tandoori cooking and food safety practices.
- Eagerness to learn and grow in a professional kitchen.

DCDP (Demi Chef de Partie)

- 4-8 years of experience in reputed restaurants or hotels.
- Ability to independently manage a tandoor section.
- Strong knowledge of kebabs, breads, marinades, seafood, poultry, and meats.
- Experience supervising junior kitchen staff and handling high-volume service.
