Italian Chef (Commis I / II / III / DCDP)

Reports To: Sous Chef / Head Chef

Role Summary

Fieno is seeking passionate and talented chefs with experience in Italian cuisine to join its culinary team. Opportunities are available across the Antipasti, Pizza, and Pasta & Main Course sections. The ideal candidate should have a strong understanding of Italian cooking techniques, ingredients, and kitchen operations, with a commitment to consistency, quality, and teamwork.

Key Responsibilities

- Prepare and execute dishes as per Fieno's recipes and standards.
- Assist in mise-en-place, production, and service operations.
- Ensure consistency in taste, presentation, and portioning.
- Maintain hygiene, food safety, and cleanliness standards.
- Monitor quality of ingredients and report shortages or quality concerns.
- Minimize wastage and follow inventory control procedures.
- Support smooth kitchen operations during service periods.

Preferred Experience

Candidates should have experience in one or more of the following:

- Antipasti & Salads




- Wood-fired / Artisan Pizza
- Fresh Pasta Production
- Italian Main Courses
- Italian sauces, stocks, risottos, and regional preparations

Eligibility

Commis I / II / III

- 1-4 years of experience in Italian restaurants, hotels, or premium casual dining concepts.
- Basic understanding of Italian ingredients and cooking techniques.
- Solid willingness to learn and grow.

DCDP (Demi Chef de Partie)

- 4-6 years of relevant experience.
- Ability to independently manage a section.
- Experience in high-volume service environments.
- Capability to guide and train junior team members.
