Position: Sous Chef / Head Chef

Job Summary

Flora Vythiri Resort is seeking a dynamic and experienced Sous Chef / Head Chef to lead and manage the entire Food & Beverage Production Department. The ideal candidate will be responsible for overseeing kitchen operations, maintaining high culinary standards, ensuring food safety compliance, and leading the team with strong leadership and training capabilities.

Key Roles & Responsibilities.

- Lead and manage the entire F&B; Production Department.
- Supervise, guide, and motivate the kitchen team to achieve operational excellence.
- Develop a positive and disciplined work culture within the department.
- Conduct regular team briefings and performance reviews.
- Identify training needs and implement structured training programs.
- Ensure proper duty allocation, shift scheduling, and manpower planning.
- Plan, design, and update menus in alignment with the resort’s luxury standards.
- Ensure consistent taste, presentation, and portion control of all dishes.
- Oversee preparation for buffet, à la carte, special events.
- Maintain high standards in food quality, hygiene, and plating.
- Monitor daily mise-en-place and production planning to avoid wastage.




- Introduce innovative dishes and seasonal menu offerings.
- Ensure strict adherence to food safety standards (FSSAI norms).
- Maintain hygiene and sanitation standards in the kitchen at all times.
- Monitor food cost and implement effective cost-control measures.
- Maintain optimum stock levels and avoid overstocking or shortages.
- Train team members on SOPs, recipes, plating standards, and hygiene.
- Develop junior chefs and support their professional growth.
- Coordinate closely with the F&B; Service team for smooth operations.
- Address guest feedback related to food quality and presentation.

Candidate Profile:

- Minimum 5–8 years of experience in a similar role in a luxury hotel/resort.
- Strong leadership and team management skills.
- Excellent knowledge of multi-cuisine (Indian & Continental preferred).
- Strong understanding of food costing and inventory control.
- Good communication and interpersonal skills.
- Ability to work in a luxury boutique resort workplace.
