Mr Chow's runs eight Indian-Chinese kitchens across Mumbai and Pune: company outlets, two private club kitchens (CCI and Willingdon), and partner and franchise outlets. Every kitchen runs on the same recipes, grammage sheets, hygiene registers and daily reports. This role makes sure they actually do.

About the role
You'll be the person who knows, on any given day, whether each kitchen ran the way it's supposed to, and if not, why. Most of your week is on the ground: checking registers, sitting with head chefs and counter teams, fixing what can be fixed on the spot, and reporting clearly on what can't. We run on checklists: every standard is either done or not done, with a reason.

What you'll own
Daily shift oversight: rosters, staffing gaps, FIFO, kitchen flow and dispatch.
Daily closing and yield review, including protein grammage variances.
Inventory, stock-outs and wastage, with the Purchase team.
Petpooja and aggregator menu availability.
The FSSAI compliance register for every kitchen.
Fortnightly outlet audits, surprise checks and weekly photo checks of registers.




Fortnightly inspections of the CCI and Willingdon Club kitchens.
Monthly visits to Pune (Kalyani Nagar, Baner) and visits to Thane every two months.
Recipe SOPs, complaint tracing, equipment and AMC follow-up, and counter staff training.
The Monday operations review: done, not done and why for every outlet, with minutes sent within 30 minutes.

Who we're looking for
A degree or diploma in Hotel Management from an IHM (or an equivalent recognised hospitality institute). Mandatory.
At least 2 years of full time, post-qualification experience in kitchen or outlet operations at a QSR chain, cloud kitchen, hotel F&B;, central kitchen or institutional catering. This role isn't open to freshers or internship-only profiles.
Multi-outlet exposure, working knowledge of FSSAI requirements, and comfort with food cost and inventory numbers.
Hands-on with POS (Petpooja preferred), Swiggy and Zomato partner tools,
