Role Description The Tandoor Chef will work full time in office at Mansha Hotels in Port Blair, preparing a range of tandoor-based dishes, including breads, kebabs, grills, and regional specialties. Responsibilities include marinating and grilling items to consistent quality standards, managing tandoor equipment and fuel, and ensuring timely preparation during breakfast, lunch, and dinner services. The role involves coordinating with the kitchen brigade, maintaining mise en place, adhering to food safety and hygiene standards, and minimizing food wastage.



The Tandoor Chef will support menu development, contribute to special banquets and events, and help train junior kitchen team members in tandoor techniques.
Qualifications

• Professional experience as a Tandoor Chef or in a similar Indian cuisine role in hotels or high-volume restaurants.
• Strong skills in tandoor operations, including marination, grilling, baking breads, temperature control, and portioning.
• Knowledge of Indian culinary techniques, regional spices, flavor profiles, and traditional recipes related to tandoor cooking.
• Demonstrated ability to maintain high standards of kitchen hygiene, food safety, and cleanliness in accordance with local regulations.
• Capability to work efficiently in a fast-paced environment, manage multiple orders, and coordinate with service and banquet teams.
• Good communication and teamwork skills, with the ability to guide and mentor junior kitchen staff.
