GIPIS Pizza House is looking for a skilled and passionate Sourdough Pizza Maker who has solid knowledge of sourdough fermentation, dough preparation, and authentic pizza-making techniques.

The ideal candidate must understand the science behind sourdough and consistently produce high-quality pizzas with excellent crust, texture, flavour, and consistency.

Key Responsibilities

- Prepare and maintain sourdough starters and pizza dough.
- Understand fermentation, hydration, dough temperature, and proofing times.
- Manage cold fermentation and dough storage correctly.
- Handle dough ball preparation, stretching, shaping, and topping.
- Operate pizza ovens and maintain consistent baking quality.
- Maintain portion control, food quality, and kitchen hygiene.
- Monitor dough inventory and minimise food wastage.
- Follow standard recipes and kitchen SOPs.
- Maintain cleanliness and food safety standards.





Required Skills
- Strong practical experience in sourdough pizza making.
- Knowledge of baker's percentages and dough calculations.
- Understanding of fermentation timing and temperature control.
- Ability to identify over-fermented and under-fermented dough.
- Knowledge of oven temperatures, baking techniques, and crust development.
- Ability to work independently in a fast-paced restaurant kitchen.

Preferred Candidate We are looking for someone who understands the craft of sourdough pizza, not just someone who can stretch dough and add toppings. Candidates must be willing to demonstrate their practical skills and explain their dough-making process during the interview.
