Job Summary:

We are looking for an experienced Procurement Lead to lead end-to-end procurement and strategic sourcing for a large QSR / restaurant chain. The role will focus on cost optimisation, supplier development, supply chain reliability, category management, quality compliance, and procurement transformation to improve margins and support business growth.

Key Responsibilities:

- Develop and execute procurement strategies and annual category plans aligned with business objectives.
- Lead sourcing and category management for poultry, mutton, rice, flour, groceries, ingredients, edible oil, dairy, fruits and vegetables, frozen and processed foods, packaging, consumables, LPG, fuel, CAPEX and indirect procurement.
- Drive cost savings, COGS improvement, Purchase Price Variance (PPV), cost avoidance and inflation mitigation.
- Analyse commodity markets and price trends to develop effective sourcing, pricing and contracting strategies.
- Identify, evaluate and develop strategic suppliers,



ensuring competitive pricing, dual sourcing and uninterrupted supply.
- Lead commercial negotiations, annual contracts, rate agreements, rebates and payment-term optimisation.
- Collaborate with R&D;, Culinary, QA and Operations teams on new product development (NPD), value engineering and alternative sourcing.
- Ensure supplier compliance with food safety, quality, regulatory and sustainability standards.
- Monitor supplier performance through OTIF, fill rate, quality, cost and service-level KPIs.
- Drive procurement digitalisation through e-RFQ, e-auctions, Supplier Relationship Management (SRM), Procure-to-Pay (P2P), spend analytics and dashboards.
- Optimise inventory, minimum order quantities (MOQ), lead times and working capital.
- Establish procurement policies, governance frameworks, standard operating procedures and performance dashboards.
- Lead, mentor and develop a high-performing procurement and category management team, setting clear KRAs, targets and accountability.
- Build category expertise, develop talent and succession plans, and foster a performance-driven culture.

Candidate Profile

- 15 to 20+ years of experience in Procurement, Strategic Sourcing or Supply Chain Management.
- Strong experience in QSR, restaurant chains, FMCG, food service, food manufacturing or retail.
- Proven track record in managing large-scale direct and indirect procurement spend.
- Strong expertise in category management, commodity sourcing, supplier development and commercial negotiations.
- Experience managing multi-location procurement operations and a diverse supplier base.
- Demonstrated achievements in cost savings, COGS improvement, supply assurance and working capital optimisation.
- Strong analytical, commercial, negotiation and stakeholder-management skills.
- Proven leadership experience in building and managing procurement teams.
- MBA / PGDM in Supply Chain Management, Procurement, Operations or a related discipline is preferred.
