Summary:

To lead the overall operations and profitable expansion of the restaurant chain, currently operating approximately 100 outlets, with a strategic objective of reaching 200 outlets within the next 4–5 years. The COO will drive operational excellence, revenue growth, profitability, brand consistency, customer experience and the development of recent restaurant concepts.

The role will provide strategic leadership to the VP Operations, Corporate Executive Chef, Projects Head, Logistics and other support functions, ensuring effective coordination between operations, culinary, projects, supply chain, finance, HR and marketing.

Key Responsibilities

- Develop and execute the company’s operational strategy and expansion roadmap.
- Drive like-for-like sales growth, outlet profitability, EBITDA and overall operational efficiency.
- Ensure consistent food quality, service standards, customer experience and brand compliance across all outlets.




- Lead the development, pilot testing, commercial validation and scaling of new restaurant concepts.
- Establish scalable operating systems, SOPs, performance dashboards and management review mechanisms.
- Drive coordination between operations, culinary, projects, procurement, logistics, finance, HR and marketing.
- Build a strong leadership pipeline, succession plans and performance-driven organisational culture.
- Evaluate operational performance, identify business risks and implement corrective actions.
- Support annual budgeting, business planning, capital allocation and strategic decision-making with the leadership team.
- Ensure compliance with food safety, statutory, labour, fire and other applicable regulatory requirements.

Overall Accountability: Sustainable, profitable growth of the restaurant portfolio, with consistent operational standards and the organisational capability to scale from 100 to 200 outlets while successfully developing new concepts.
