Head Chef – Central Kitchen Operations

Role Overview
We are looking for a hands-on Head Chef to lead daily central kitchen operations and ensure consistent, secure and timely production and supply to our restaurant outlets. The role requires strong practical knowledge of batch cooking, chilling, freezing, storage, inventory and distribution.
Key Responsibilities
• Plan daily and weekly production based on outlet requirements and demand forecasts.
• Manage bulk preparation and batch cooking while maintaining consistent taste, quality and yields.
• Develop and implement standard recipes, production sheets, portion sizes and preparation SOPs.
• Oversee cook-chill and cook-freeze processes, blast chilling, freezing, thawing and reheating procedures.
• Maintain appropriate storage conditions, temperature records, batch labelling, traceability and shelf-life controls.
• Manage inventory through FIFO/FEFO systems and regular stock checks.




• Monitor food costs, production losses and wastage.
• Coordinate with procurement and suppliers to ensure raw material quality and availability.
• Oversee packaging, cold chain, dispatch schedules and timely delivery to outlets.
• Coordinate with outlet chefs on quantities, product quality, handling and finishing procedures.
• Supervise, train and schedule the central kitchen team.
• Maintain hygiene, sanitation and compliance with applicable FSSAI requirements.
• Ensure proper cleaning, upkeep and preventive maintenance of kitchen equipment.

Candidate Requirements
• Minimum 10 years of experience in central kitchen operations within a hospitality company.
• Experience supervising a production team and supplying multiple restaurant outlets.
• Strong knowledge of bulk cooking, food preservation, cold chain and food safety.
