Manager – Dairy Technology

1. Job Purpose

To manage dairy technology operations, product development, production processes, quality control, hygiene, and compliance with applicable food safety standards. The candidate will be responsible for ensuring efficient dairy processing, consistent product quality, and smooth plant operations.
1. Key Responsibilities

A. Dairy Production & Processing

- Manage daily dairy production and processing activities.
- Supervise milk handling, pasteurization, homogenization, chilling, fermentation, and other relevant processing operations.
- Monitor production parameters to maintain product quality and consistency.
- Ensure optimum utilization of machinery, manpower, raw materials, and utilities.
- Minimize production losses and improve operational efficiency.

B. Product Development & Innovation

- Develop and improve dairy products such as milk, curd, paneer, ghee, butter, dairy beverages, and other value-added products, as applicable.
- Conduct product trials, shelf-life studies, and process optimization.
- Standardize recipes, formulations, and manufacturing processes.
- Coordinate with the R&D; team for new product development and commercialization.

C. Quality Control & Food Safety

- Implement quality control procedures for raw milk, ingredients, in-process products, and finished goods.
- Monitor parameters such as fat, SNF, acidity, microbiological quality, and other relevant specifications.
- Ensure proper sanitation, cleaning, and hygiene practices throughout the plant.
- Handle product complaints, non-conformities, corrective actions, and preventive measures.
- Coordinate with the Quality Assurance team for testing, documentation, and product release.

D. Regulatory Compliance





- Ensure compliance with applicable FSSAI regulations and other relevant food safety requirements.
- Maintain production records, batch manufacturing records, traceability records, and quality documentation.
- Support audits, inspections, licensing requirements, and corrective actions.
- Ensure proper implementation of GMP, GHP, HACCP, and applicable food safety management systems.

E. Plant & Team Management

- Supervise production staff, technicians, and operators.
- Prepare production schedules and monitor daily targets.
- Coordinate with procurement, maintenance, quality assurance, packaging, warehousing, and dispatch teams.
- Ensure preventive maintenance of dairy processing equipment.
- Train employees on production procedures, hygiene, food safety, and workplace safety.

F. Cost Control & Reporting

- Monitor production costs, raw material consumption, yield, and wastage.
- Prepare daily, weekly, and monthly production reports.
- Identify opportunities to improve productivity and reduce operational costs.
- Report production performance, quality issues, and operational challenges to management.

1. Educational Qualifications

- B.Tech / B.E. in Dairy Technology, Dairy Engineering, Food Technology, or an equivalent relevant qualification.
- M.Tech in Dairy Technology or Food Technology will be an added advantage.

1. Experience

- 5–8 years of relevant experience in the dairy processing or food manufacturing industry.
- Experience in production management, quality control, product development, and plant operations is preferred.
- Candidates with experience in dairy plant commissioning, process improvement, and team management will be preferred.

1. Required Skills

- Solid technical knowledge of dairy processing and preservation.
- Knowledge of dairy machinery, production planning, and quality assurance.
- Understanding of FSSAI requirements, GMP,

Pay: ₹10,000.00 - ₹25,000.00 per month
