Position Overview:

The Curd Production Specialist is responsible for overseeing and optimizing the production of high-quality curd within a dairy processing facility. This role ensures that all production processes adhere to quality standards, food safety regulations, and operational efficiency requirements. The specialist collaborates with various departments, manages production teams, and ensures the delivery of curd products that meet customer and market demands.

Key Responsibilities:

1. Production Management:
- Plan, manage, and oversee the curd production process, from milk preparation to packaging.
- Monitor key parameters such as temperature, acidity (pH), and fermentation time to ensure consistent quality.
- Ensure production targets are met in terms of quantity, quality, and timeline.

- Quality Assurance:

- Conduct regular quality checks at different production stages to maintain product consistency.
- Implement and monitor HACCP (Hazard Analysis Critical Control Point) and GMP (Positive Manufacturing Practices) protocols.
- Troubleshoot production issues to prevent deviations from quality standards.

- Team Leadership:

- Supervise and train production staff, ensuring they follow standard operating procedures (SOPs).
- Assign roles and responsibilities to team members to maintain workflow efficiency.
- Foster a culture of safety, quality, and teamwork within the production unit.

- Process Optimization:

- Identify opportunities to improve production efficiency,



reduce waste, and optimize resource utilization.
- Collaborate with the R&D; team to refine curd formulations or introduce new product variants.
- Implement automation or advanced technologies where feasible to enhance production capabilities.

- Compliance and Documentation:

- Maintain records of raw material usage, production output, and process parameters.
- Ensure compliance with local and international food safety regulations and industry standards.
- Prepare reports on production performance and suggest actionable insights for continuous improvement.

- Equipment Maintenance:

- Monitor and maintain production equipment, ensuring they are in good working condition.
- Coordinate with the maintenance team for timely repairs and preventive maintenance schedules.

Qualifications and Skills:

- Educational Background:
- Bachelor’s degree in Dairy Technology, Food Science, Microbiology, or a related field.

- Experience:

- Minimum of 3-5 years of experience in dairy production, specifically in curd or fermented products.
- Familiarity with fermentation processes and quality assurance in dairy manufacturing.

- Technical Skills:

- Proficiency in using production equipment such as pasteurizers, fermenters, and packaging machines.
- Knowledge of food microbiology and enzymatic processes related to curd production.
- Competence in data analysis and production planning software.
