Indian Cook - Commis 1 Job Description (Hotel)

Job Title : Commis 1 - Indian Cuisine Department : Food & Beverage - Kitchen Reports To : Chef de Partie / Sous Chef

Job Summary

A Commis 1 (Indian Cuisine) is responsible for preparing and cooking a variety of Indian dishes while maintaining high standards of taste, presentation, and hygiene. The role supports senior chefs in daily kitchen operations and ensures consistency in food quality.

Key Responsibilities

- Prepare and cook Indian dishes (North Indian, South Indian, or regional specialties) as per standard recipes
- Assist in mise en place (cutting, marinating, grinding, and preparation of ingredients)
- Operate cooking equipment such as tandoor, grills, and stoves (if trained)
- Ensure consistency in taste, portion size, and presentation
- Maintain cleanliness and hygiene in the kitchen area
- Store food items properly and follow FIFO (First In, First Out) method
- Monitor stock levels and inform seniors about shortages
- Assist during buffet and à la carte service
- Follow food safety and hygiene standards (HACCP guidelines)

Additional Duties

- Support senior chefs during peak service hours
- Assist in preparing gravies,



curries, breads (roti, naan), and rice dishes
- Handle kitchen equipment safely
- Help in minimizing food wastage
- Participate in training and daily briefings

Skills & Qualifications

- Good knowledge of Indian cooking techniques, spices, and ingredients
- Ability to prepare curries, tandoori items, breads, and regional dishes
- Strong sense of taste, aroma, and presentation
- Ability to work under pressure in a fast-paced kitchen
- Teamwork and communication skills

Education & Experience

- Diploma/Degree in Hotel Management or Culinary Arts
- 1-2 years of experience as Commis 2 or similar role
- Experience in hotel or fine-dining restaurant preferred

Work Environment

- Busy hotel kitchen with high standards
- Shift work, including weekends and holidays
- Physically demanding (standing long hours, heat exposure)
