Culinary Preparation & Wok Mastery
Specialized Cooking: Independently operate the Chinese station, preparing authentic dishes such as stir-fries, noodles, dim sum, fried rice, soups, and appetizers.
Wok and Sauce Handling: Demonstrate advanced knowledge of wok handling (tossing/temperatures), as well as the accurate balancing of traditional Chinese sauces, gravies, and seasonings.
Mise en Place: Oversee and complete the daily setup (chopping vegetables, marinating meats, preparing base sauces) to ensure the station is completely ready before service begins.
Quality Control & Consistency
Standard Operating Procedures (SOPs): Cook all dishes in strict accordance with the establishment's portion sizes, standardized recipes, and presentation guidelines. [1, 2]
Taste and Presentation: Personally check the seasoning, temperature, and plating of dishes before they leave the kitchen to ensure uncompromised quality and customer satisfaction.
Section Leadership & Training
Supervising Junior Staff: Act as a team leader for the Chinese section by delegating tasks and guiding Commis Chefs (junior cooks) and trainees.
Skill Development:



Train junior staff in specific Chinese culinary techniques, proper knife skills, and food presentation.
Inventory, Stock, & Cost Management
Stock Monitoring: Keep track of specialized ingredients (like specific soy sauces, sesame oils, and Asian greens) and communicate ordering requirements to senior chefs before items run out.
Waste Reduction: Implement the First In, First Out (FIFO) method for stock rotation to minimize food spoilage and control overall kitchen costs.
Kitchen Hygiene & Safety
Sanitation Standards: Maintain excellent hygiene and organization within the Chinese kitchen section, ensuring all tools (like woks, cleavers, and steamers) are properly cleaned.
Food Safety Compliance: Adhere to local food safety regulations and guidelines (such as HACCP) to prevent cross-contamination and ensure proper storage temperatures.
