About the Role

Royal China is seeking a skilled and experienced Sushi Chef with expertise in Japanese cuisine, sushi preparation and premium dining standards.

The ideal candidate should have experience working in a reputed Japanese or Asian restaurant, premium dining establishment or five-star hotel.

Key Responsibilities

Prepare high-quality sushi, sashimi, nigiri, maki rolls and other Japanese specialities.

Ensure consistency in taste, presentation, portion sizes and quality.

Demonstrate excellent knife skills, fish preparation and sushi rice techniques.

Maintain strict food safety, hygiene and sanitation standards in accordance with FSSAI requirements.

Ensure proper handling, storage, temperature control and freshness of seafood and ingredients.

Follow standardised recipes, kitchen SOPs and presentation guidelines.

Monitor inventory, ingredient quality, stock rotation and food wastage.

Maintain cleanliness and organisation of the sushi station.





Coordinate with the Head Chef and kitchen team to ensure efficient service.

Qualifications & Experience

Preferred: Diploma or Degree in Culinary Arts, Hotel Management or Food Production.

Minimum 2 years of professional experience specialising in sushi preparation.

Previous experience in a reputed Japanese restaurant, premium Asian dining establishment or five-star hotel preferred.

Robust knowledge of sushi, sashimi, Japanese ingredients and preparation techniques.

Excellent knife skills and attention to detail.

Good understanding of seafood handling, food safety and hygiene.

Ability to work efficiently under pressure while maintaining premium presentation standards.
