Job Summary

Responsible for preparing authentic Malwani cuisine, including seafood, fish curries, chicken dishes, traditional gravies, and Malwani masalas, while maintaining food quality, taste consistency, hygiene, and presentation standards.

Key Responsibilities

- Prepare authentic Malwani dishes using traditional spices, coconut-based gravies, and regional cooking techniques.

- Handle the preparation of fish, seafood, chicken, and other Malwani specialties.

- Complete daily mise en place, including cleaning, cutting, marinating, and grinding spices.

- Follow standard recipes, portion sizes, and presentation guidelines.

- Ensure freshness and quality of ingredients, particularly fish and seafood.

- Maintain proper food storage, temperature control, and FIFO practices.

- Follow kitchen hygiene, sanitation, and food safety standards.

- Control food wastage and assist with stock checking and inventory.





- Coordinate with senior chefs to ensure timely preparation and smooth kitchen operations.

Candidate Requirements

- Minimum 2–3 years of experience in Indian cuisine, preferably specializing in Malwani cuisine.

- Good knowledge of authentic Malwani fish curries, seafood preparations, chicken sukka, kombdi vade, and traditional Malwani masalas.

- Knowledge of coastal Maharashtrian cooking techniques and spice blends.

- Hotel management or culinary qualification preferred.

- Ability to work efficiently in a rapid-paced hotel or restaurant kitchen.

Pay: ₹20,000.00 - ₹30,000.00 per month
