ABOUT THE SPIRITED SPOT

The Spirited Spot (TSS) is a premium dining and entertainment destination in Baner, Pune, known for its global street food, signature beverages, live music and vibrant atmosphere.

We are looking for a skilled and experienced Commis 1 – Sushi who has strong knowledge of Japanese cuisine, sushi preparation and presentation.

KEY RESPONSIBILITIES

1. Sushi Preparation & Cooking

- Prepare different varieties of sushi, including Maki, Uramaki, Nigiri and California Rolls.
- Prepare sushi rice with correct seasoning, texture and consistency.
- Handle fresh seafood, vegetables and other sushi ingredients.
- Prepare sushi sauces, dressings and accompaniments.
- Maintain consistency in sushi rolling, cutting, portioning and presentation.
- Follow standard recipes and plating guidelines.

2. Kitchen Operations

- Independently manage the sushi preparation station.
- Complete daily mise en place before service.
- Ensure timely preparation of orders during busy hours.
- Maintain proper storage and handling of sushi ingredients.
- Coordinate with the Asian kitchen team for smooth service.

3. Food Safety & Hygiene

- Maintain strict hygiene standards, especially when handling raw seafood.
- Follow food safety procedures and temperature-control requirements.
- Ensure proper cleaning and sanitisation of knives, chopping boards and equipment.
- Follow FIFO and FEFO inventory practices.
- Prevent cross-contamination and maintain ingredient freshness.

4. Inventory & Cost Control

- Follow standard portion sizes to control food costs.
- Minimise seafood and ingredient wastage.
- Monitor daily stock requirements.
- Report ingredient shortages to senior chefs.




- Maintain proper storage and inventory records.

REQUIRED QUALIFICATIONS

- Minimum 3–5 years of professional kitchen experience, including at least 2 years of hands-on sushi preparation.
- Previous experience in a Japanese restaurant, premium Asian restaurant or five-star hotel preferred.
- Strong knowledge of sushi rice preparation, rolling techniques and knife skills.
- Experience preparing vegetarian and non-vegetarian sushi.
- Knowledge of Japanese ingredients, sauces and condiments.
- Understanding of seafood handling, food safety and hygiene.
- Ability to independently manage a sushi station.
- Hotel Management qualification preferred but not mandatory.
