Position : Porotta Maker Location : Hotel Ganga, Muvattupuzha, Ernakulam, Kerala Department : Kitchen / Food Production Reports To : Executive Chef / Sous Chef / CDP Employment Type : Full-Time

Job Summary

Key ResponsibilitiesFood Preparation

- Prepare porotta dough according to standard recipes and quality specifications.
- Knead, stretch, layer, and shape porottas using traditional techniques.
- Cook porottas to the required texture, taste, and appearance.
- Ensure fresh porottas are available during service hours.

Quality Control

- Maintain consistency in size, taste, texture, and presentation.
- Ensure all products meet Hotel Ganga's quality standards.
- Monitor ingredient quality and report any issues to supervisors.

Kitchen Operations

- Organize and maintain the porotta preparation station.
- Prepare adequate quantities based on daily requirements and occupancy forecasts.
- Coordinate with kitchen staff to ensure timely service.
- Assist in preparing other bread items or kitchen tasks when required.

Hygiene & Safety

- Follow food safety, hygiene, and sanitation standards at all times.
- Maintain cleanliness of workstations, utensils, and equipment.
- Ensure proper storage of ingredients and prepared dough.
- Adhere to all kitchen safety procedures.

Inventory Management

- Monitor stock levels of flour, oil, and other ingredients.
- Report shortages and procurement requirements to supervisors.
- Minimize food wastage and ensure efficient use of raw materials.

Qualifications :

- Basic education preferred.
- Formal culinary training is an advantage but not mandatory.




- Minimum 2-5 years of experience as a Porotta Maker in a hotel, restaurant, or catering unit.

Required Skills :

- Expertise in preparing Kerala Porottas using traditional methods.
- Positive knowledge of dough preparation and handling.
- Ability to maintain consistency during high-volume production.
- Knowledge of food hygiene and safety practices.
- Ability to work efficiently under pressure.
- Teamwork and time-management skills.

Hotel Ganga, Muvattupuzha, Ernakulam is looking for a skilled Porotta Maker who can consistently deliver authentic Kerala porottas and contribute to maintaining the hotel's reputation for quality food and excellent guest satisfaction.

Pay: ₹20,000.00 - ₹25,000.00 per hour
