Sous Chef / Senior CDP - Chinese | Nineteenth May, Sector 67 Mohali

Nineteenth May is a premium resto-bar, catering and events brand in Mohali, running since 2019. We need an experienced Chinese / Indo-Chinese chef to lead our Chinese section for the restaurant and large corporate catering (up to 1,100 guests).

Key Responsibilities:

- Lead the Chinese and Indo-Chinese section: starters, gravies, noodles, rice, dim sum, soups and sauces

- Develop and standardise recipes, maintain taste, portion and plating

- Plan mise-en-place and bulk production for catering events

- Train and supervise commis; manage section rosters

- Control food cost and wastage, place requisitions, follow FIFO, HACCP and FSSAI norms

- Support the Kitchen Incharge in current menu development

Who we want:

- 5+ years in Chinese kitchen, at least 2 years as CDP / Senior CDP

- Strong wok skills; Pan-Asian / Thai knowledge is a plus

- Bulk catering experience preferred

- Leadership, discipline and cleanliness
