JOB DESCRIPTION – EXECUTIVE CHEF

Viceroy Luxury Resorts and Hotels

Experience: Minimum 7–10 years, preferably in reputed hotels or luxury resorts.

Job Summary

We are looking for a highly experienced Executive Chef with excellent culinary expertise, strong managerial skills and the ability to independently manage the entire kitchen operations while maintaining exceptional food quality and guest satisfaction.

Key Responsibilities

- Independently manage and supervise all kitchen operations.
- Lead, train and manage the entire kitchen team, ensuring discipline and accountability.
- Plan menus and maintain consistency in food quality, taste and presentation.
- Possess excellent knowledge of multiple cuisines, ingredients and cooking techniques.
- Ensure timely food preparation and smooth coordination with restaurant operations.
- Minimise food-related guest complaints through strict quality control and corrective actions.
- Manage food costing, portion control, inventory, procurement and wastage.
- Prepare staff duty rosters and ensure effective manpower utilisation.
- Maintain kitchen hygiene,



food safety and FSSAI standards.
- Coordinate with the Restaurant Manager to ensure smooth food and beverage operations.

Required Skills & Qualifications

- Proven experience as an Executive Chef or Head Chef.
- Excellent culinary knowledge and kitchen management expertise.
- Robust leadership, team management and decision-making skills.
- Good knowledge of food costing, menu planning and inventory control.
- Ability to independently handle kitchen operations without constant supervision.
- Strong problem-solving skills and commitment to guest satisfaction.

Preferred Candidate: Experienced professionals from reputed 4-star or 5-star hotels and luxury resorts.

Key Expectation: Must be capable of independently managing the complete kitchen department, leading the team effectively, maintaining consistent food standards, minimising guest complaints and ensuring operational efficiency.

Pay: ₹40,000.00 - ₹65,000.00 per month
