Job Description:

The Fisherman's Wharf, Hyderabad, is seeking a skilled and experienced Demi Chef de Partie (DCDP) specializing in Bakery to join our culinary team.

The ideal candidate should have strong knowledge of baking techniques, hands-on experience in preparing a variety of bakery products, and the ability to efficiently manage daily bakery operations while maintaining high standards of product quality, consistency, presentation, and hygiene.

Key Responsibilities:

- Prepare and bake a variety of bakery products, including breads, rolls, buns, pastries, cookies, cakes, and other baked goods as per restaurant requirements.
- Assist the Chef de Partie (CDP) in supervising and managing the daily operations of the bakery section.
- Independently handle assigned bakery preparations and ensure smooth operations during service hours.
- Oversee daily mise en place, including the preparation of doughs, batters, fillings, and other essential ingredients.
- Demonstrate proficiency in dough preparation, kneading, proofing, shaping, baking, and finishing techniques.
- Ensure all bakery products are prepared according to standardized recipes, portion specifications, and presentation guidelines.
- Maintain consistency in product quality, taste, texture, appearance, and portion sizes.
- Monitor baking temperatures, timings, and production schedules to ensure timely availability of bakery products.
- Supervise and guide Commis chefs and junior kitchen staff to ensure efficient workflow and adherence to bakery standards.
- Maintain cleanliness and hygiene across workstations, ovens, mixers, equipment, and storage areas.
- Ensure compliance with food safety regulations, sanitation standards, and proper food handling and storage procedures.
- Monitor stock levels,



assist with inventory management, and ensure proper utilization of ingredients to minimize wastage.
- Follow FIFO procedures and maintain appropriate storage, labeling, and handling of bakery ingredients and finished products.
- Coordinate effectively with senior chefs and other kitchen sections to meet daily production and service requirements.
- Assist the CDP in maintaining operational efficiency, production quality, and kitchen discipline.

Requirements:

- Previous experience as a DCDP or Commis I specializing in Bakery at a reputed restaurant, hotel, or bakery establishment.
- Strong knowledge of baking techniques, ingredients, recipes, and production methods.
- Hands-on experience in preparing breads, buns, rolls, pastries, cookies, cakes, and other bakery products.
- Good understanding of dough preparation, fermentation, proofing, baking temperatures, and finishing techniques.
- Ability to independently manage assigned bakery production and responsibilities.
- Experience in operating bakery equipment, including ovens, mixers, proofers, and other baking tools.
- Ability to supervise and guide junior kitchen staff when required.
- Good understanding of standardized recipes, portion control, and product presentation.
- Knowledge of kitchen hygiene, food safety, and sanitation practices.
- Ability to work efficiently in a quick-paced, high-volume kitchen environment.
- Strong teamwork, organizational, and time management skills.
- Willingness to work flexible shifts, including weekends and public holidays.
