About the Role

We are looking for a talented and creative Executive / Head Pastry Chef to lead our pastry kitchen at a premium, health-conscious bakery.

We do not use refined flour, refined sugar, compound chocolate, or oil-based creams.

Key Responsibilities

- Develop innovative recipes for cakes, pastries, tarts, cookies, and desserts using alternative flours, natural sweeteners, couverture chocolate, and fresh dairy creams.
- Create seasonal and trend-driven dessert menus.
- Design and execute premium celebration, wedding, and customized cakes.
- Lead daily pastry kitchen operations, production planning, and team management.
- Train and supervise pastry cooks and kitchen assistants.
- Maintain high standards of taste, presentation, hygiene, and food safety.
- Manage inventory, sourcing, food costing, and wastage control.

Requirements





- Proven experience as a Pastry Chef, Sous Chef, or Head Pastry Chef in a bakery, patisserie, hotel, or café.
- Strong expertise in health-conscious baking without refined flour, refined sugar, compound chocolate, or oil-based creams.
- Advanced cake decoration skills, including ganache, fondant, piping, glazes, and cream finishes.
- Excellent creativity, aesthetics, and presentation skills.
- Strong leadership and kitchen management capabilities.
- Knowledge of food costing, portion control, and production planning.
- Formal training in Pastry, Baking, or Culinary Arts is preferred.
