Dim Sum Chef is responsible for preparing, cooking, and presenting a variety of authentic dim sum dishes while maintaining the highest standards of food quality, hygiene, consistency, and kitchen efficiency. The role requires expertise in traditional and contemporary dim sum preparation, including dough making, fillings, shaping techniques, steaming, frying, and production planning.

Key Responsibilities

- Prepare and produce a wide range of dim sum items, including dumplings, buns, rolls, and specialty Chinese appetisers.
- Ensure consistency in taste, texture, presentation, and portion control.
- Prepare ingredients, fillings, sauces, and doughs according to standard recipes.
- Maintain food quality standards and ensure dishes are served fresh and on time.
- Monitor stock levels and assist in inventory management and requisition planning.
- Adhere to food safety, hygiene, HACCP, and sanitation standards at all times.
- Minimise food wastage and control costs through efficient utilisation of ingredients.
- Train and guide junior kitchen staff in dim sum preparation techniques.




- Ensure proper storage, handling, and labelling of food items.
- Support menu development and introduce innovative dim sum offerings when required.
- Maintain cleanliness and organisation of the assigned kitchen section.

Requirements

- Proven experience as a Dim Sum Chef in hotels, fine dining restaurants, or speciality Chinese restaurants.
- Strong knowledge of traditional dim sum techniques and Chinese culinary practices.
- Ability to prepare dim sum from scratch, including dough, fillings, and sauces.
- Knowledge of food safety and hygiene regulations.
- Ability to work under pressure in a rapid-paced kitchen environment.
- Strong teamwork and communication skills.
- Culinary certification is an added advantage.

Preferred Qualifications

- 3-8 years of relevant experience in Chinese or Asian cuisine.
- Experience working in luxury hotels or high-volume restaurants.
- Passion for culinary excellence and innovation.
