About Us:

Sangria by cconceptt is a premium Rooftop Restaurant & Bar in Raipur, Chhattisgarh, offering a curated mix of Continental & Indian cuisine with a fine-dine experience. We are looking for an experienced and passionate CDP - Indian Curry to lead our Indian Kitchen section.

Role Overview:

The CDP - Indian Curry will be responsible for managing the Indian section independently, preparing authentic and innovative Indian curries, tandoor items, and North Indian dishes to the highest standards.

Key Responsibilities:

1. Culinary Operations:

- Independently handle the Indian Curry section - Gravies, Curries, Tandoor, Indian Main Course, Rice & Breads
- Prepare authentic North Indian, Mughlai, Punjabi & Regional Indian dishes as per SOPs
- Ensure consistency in taste, portion, quality, and plating
- Assist in menu planning, new dish development, and trials for Indian section

2. Quality & Hygiene:

- Maintain cleanliness, hygiene, and food safety standards (FSSAI / HACCP) in the section
- Follow all SOPs for food storage, labelling, gravy preparation & FIFO system




- Ensure mise-en-place and gravy base preparation is ready before every service

3. Team & Cost Control:

- Train and supervise Commis I, II & III in the Indian section
- Control food wastage, maintain food cost, and manage inventory of the section
- Coordinate with Continental section and F&B; team for smooth service during peak hours

Candidate Requirements:

- Minimum 6 to 15 years of experience as CDP / DCDP - Indian Curry in a reputed 4/5-Star Hotel, Fine-Dine Restaurant, Rooftop Restaurant, or Lounge & Bar
- Strong expertise in North Indian, Mughlai, Punjabi Curries, Tandoor, Biryani, Dal, Paneer & Gravy Bases
- Knowledge of South Indian / Regional dishes will be an added advantage
- Good knowledge of kitchen equipment, food safety, and hygiene
- Ability to work in a fast-paced rooftop dinner service environment
- Positive team handling and communication skills
- Degree / Diploma in Hotel Management / Culinary Arts preferred
- Willing to relocate to Raipur for an on-site role
