About the RoleWe are looking for an experienced and passionate Commis 2 (Chinese Cuisine) to join our kitchen team at Peking House.

The ideal candidate should have strong hands-on experience in preparing authentic Chinese and Indo-Chinese dishes, with excellent wok cooking skills, speed, consistency, and a commitment to food quality and hygiene.

Key Responsibilities

1. Food Preparation & Cooking

- Prepare Chinese and Indo-Chinese dishes according to standardized recipes.
- Demonstrate proficiency in wok cooking, stir-frying, deep-frying, steaming, and sauce preparation.
- Prepare fried rice, noodles, soups, starters, gravies, and signature Chinese dishes.
- Handle vegetarian, chicken, and other non-vegetarian preparations.
- Maintain consistency in taste, presentation, portion sizes, and quality.
- Manage multiple orders efficiently during peak service hours.

2. Kitchen Operations

- Complete daily mise en place and prepare ingredients before service.
- Manage assigned cooking stations independently.
- Maintain stock rotation using FIFO principles.
- Minimize food wastage and ensure proper ingredient utilization.
- Follow established recipes, portion controls, and preparation standards.
- Coordinate with other kitchen staff to ensure timely order preparation.

3. Food Safety & Hygiene

- Maintain cleanliness of cooking stations, equipment, and storage areas.
- Follow food-safety, hygiene, and sanitation procedures.
- Prevent cross-contamination between raw and cooked ingredients.
- Ensure correct food storage, handling,



and temperature controls.
- Follow restaurant standards for halal ingredient handling and preparation.

4. Teamwork & Accountability

- Support the Head Chef in daily kitchen operations.
- Guide junior cooks and kitchen helpers where required.
- Communicate ingredient shortages and equipment issues promptly.
- Maintain discipline, punctuality, and teamwork.
- Support new menu trials and recipe improvements.
- Required Skills & QualificationsMinimum 3 years of relevant experience in Chinese or Indo-Chinese kitchens.
- Strong wok-handling and high-flame cooking skills.
- Good knowledge of Chinese sauces, seasonings, marinades, and cooking techniques.
- Ability to prepare food quickly without compromising quality.
- Experience working in a busy restaurant, QSR, or cloud kitchen.
- Understanding of kitchen hygiene, food safety, and inventory control.
- Ability to work independently and as part of a team.
- Formal culinary qualifications are an advantage but not mandatory.
