With layers of vanilla ice cream, graham crackers, lemon yogurt and fresh berries, this mixed berry icebox cake is a no-bake delight that’s as easy to make as it is to enjoy. This dessert is versatile enough to be served at casual backyard barbecues, elegant garden parties or as a simple weeknight treat.

It’s also a excellent make-ahead option, allowing you to enjoy your gathering without last-minute stress. The combination of strawberries, blueberries, blackberries and raspberries provides a patriotic flair, making it an excellent choice for all-American celebrations. The red, white and blue colors of the cake add a festive touch to any table.

This icebox cake is a summer staple whenever you’re craving a sweet treat.

Technique Tip: Remove the ice cream from the freezer for 10 to 15 minutes you make the cake. This will soften it, making it easier to mix in the flavorings and berries. Work quickly when preparing the cake; the faster you get it back in the freezer,



the better it will slice when serving.
