Job Summary

We are looking for a skilled and experienced Dosa / Poratta Maker to prepare authentic South Indian breakfast items and Kerala-style porattas while maintaining the highest standards of quality, hygiene, and consistency. The ideal candidate should be able to work efficiently in a rapid-paced hotel kitchen and ensure timely service during busy hours.

Key Responsibilities

- Prepare a variety of dosas, including Plain, Masala, Ghee, Paper, and other specialty dosas.
- Prepare soft, flaky Kerala porattas with consistent quality and taste.
- Prepare and maintain dosa batter, poratta dough, chutneys, sambar, and other accompaniments.
- Ensure proper cooking techniques, portion control, and attractive presentation.
- Maintain cleanliness and hygiene of the dosa/poratta station in accordance with food safety standards.
- Monitor ingredient stock levels and inform the kitchen supervisor of replenishment requirements.
- Minimize food wastage and ensure efficient use of raw materials.
- Follow standard recipes and hotel quality standards.
- Coordinate with other kitchen staff to ensure smooth service during breakfast and meal periods.
- Clean and maintain cooking equipment, tawas, utensils, and workstations after each shift.

Requirements





- Minimum 2–5 years of experience as a Dosa Maker, Poratta Maker, or South Indian Cook in a hotel or restaurant.
- Strong knowledge of South Indian cuisine and Kerala-style poratta preparation.
- Ability to prepare food quickly without compromising quality.
- Knowledge of food safety, hygiene, and sanitation standards.
- Ability to work flexible shifts, weekends, and public holidays.
- Good teamwork and communication skills.

Preferred Qualification

- High School/SSLC or equivalent.
