Job Description

- Manage the daily operations of the stewarding department.
- Supervise, train, schedule, and evaluate stewarding staff.
- Ensure all kitchen utensils, cookware, crockery, cutlery, and equipment are cleaned and sanitized according to hotel standards.
- Maintain cleanliness in kitchens, storage areas, dishwashing stations, and waste disposal areas.
- Monitor and control inventory of cleaning chemicals, equipment, and stewarding supplies.
- Ensure compliance with food safety, hygiene, and occupational health and safety standards.
- Coordinate with the Executive Chef and F&B; team to support restaurant and banquet operations.
- Oversee waste management and recycling procedures.




- Arrange preventive maintenance for dishwashing machines and kitchen equipment.
- Control labor costs and stewarding expenses within the approved budget.
- Conduct regular inspections and implement corrective actions where necessary.
- Ensure all team members follow hotel policies and standard operating procedures (SOPs).

Qualifications

- Diploma or Bachelor's degree in Hotel Management or Hospitality Management.
- 5–8 years of stewarding experience in a hotel, with at least 2–3 years in a supervisory or managerial role.
- Strong leadership and team management skills.
- Valuable knowledge of HACCP, food safety, sanitation, and hygiene standards.
- Excellent organizational, communication, and problem-solving skills.
- Ability to work flexible hours, including weekends and public holidays.
