Day 1 Induction

1. Welcome & introduction to management team

2. Brief about brand vision, and operational KPIs

3. Outlet walkthrough: all FOH, BOH, POS, store, back office, emergency exits

4. Explain shift timings, attendance system, and floor manager accountability

1. Pre-Shift Opening

1. Report 30 mins before shift

2. Wear proper uniform and maintain grooming standards

3. Review previous day sales, complaints, and handover reports

4. Conduct pre-shift briefing for all FOH staff and section leaders

5. Approve reservation plan, seating layout, and staff roster

6. Inspect entire outlet: entrance, dining, restrooms, side stations, bar

7. Confirm all systems (POS, KDS, music, AC, lighting) are operational

8. Inform Branch Head of any critical issues

2. Operations & Floor Management

1. Oversee complete FOH operations and ensure SOP compliance

2. Manage real-time floor coverage and reallocate staff as needed

3. Monitor service flow, KOT times, and table turnover

4. Conduct quality audits on food, beverage, and service standards

Approve all voids, discounts, and complimentary items

6. Act as duty manager and make operational decisions independently

3. Revenue & Cost Control

1. Monitor daily sales, covers, APC, and revenue targets hourly

2. Drive upselling initiatives and promotional campaigns

3. Control food and beverage cost through portion and wastage monitoring

4. Analyze daily Sales and Sales variance as per the Target

5. Submit daily feedback and operational report.

4. Guest Experience & Complaint Resolution

1. Personally greet VIP, regular, and high-value guests

2. Handle all critical complaints and escalations with final outlet authority

3. Monitor online reviews and respond to guest feedback

4. Manage special events, corporate bookings, and private dining

5. Build guest database and drive loyalty program enrollment

6. Ensure guest satisfaction scores meet or exceed brand benchmarks
