Chef de Cuisine – Cruise Ship Opportunity ?? ?

Position: Chef de Cuisine (CDC)

Department: Galley / Culinary

Reports To: Executive Chef

Key Responsibilities

- Supervise and manage the entire galley operation of the assigned venue.
- Ensure smooth food preparation, presentation, and service while maintaining high-quality standards.
- Ensure compliance with food safety, sanitation, hygiene, and company procedures.
- Lead and manage a multicultural culinary team, including Sous Chefs, CDPs, Assistant CDPs, Cooks, and Assistant Cooks.
- Coordinate with the Executive Chef and Main Galley for smooth operational flow.
- Monitor food requisitions, meal counts, deliveries, storage, and inventory.
- Ensure menus, recipes, methods, and specifications are consistently followed.
- Conduct regular menu briefings and support Section Heads with operational requirements.
- Monitor guest feedback and work closely with the service team to ensure guest satisfaction.
- Maintain cleanliness, organization, and efficient operation of the assigned galley.
- Support staff development, coaching, motivation, and teamwork.

Candidate Requirements




- 4–5 years of experience as a Chef de Cuisine or in a similar senior culinary position.
- Experience in a 5-star hotel/resort or premium-brand restaurant environment.
- Strong and advanced culinary skills.
- Excellent English communication skills.
- Previous experience managing multicultural teams .
- Robust leadership, coaching, and team-building abilities.
- Guest-focused, service-oriented, and positive personality.
- Professional appearance with excellent hygiene standards.
- Strong knowledge of Public Health and Sanitation compliance .
- Ability to work under pressure and handle complex operational situations.
- Minimum age: 21 years .
- Must be physically fit and able to handle approximately 30 kg and work long hours as required onboard.
- Previous cruise ship experience is an advantage.
