Job Summary

We are looking for an experienced and passionate Senior Chef de Partie – South Indian Cuisine to manage the South Indian section of the kitchen. The candidate should have strong knowledge of authentic South Indian dishes, excellent cooking skills, and the ability to maintain high standards of food quality, hygiene, and kitchen operations.

Key Responsibilities
- Prepare authentic South Indian dishes such as dosas, idlis, vadas, uttapams, appams, pongal, upma, sambar, rasam, chutneys, and regional curries.
- Handle breakfast buffet, à la carte, and banquet food production as per hotel standards.
- Manage the South Indian kitchen section independently during assigned shifts.
- Ensure consistency in taste, quality, presentation, and portion control.
- Prepare mise en place and ensure adequate stock for daily operations.
- Supervise and guide Commis I, II, and III chefs working in the section.
- Maintain food cost by minimizing wastage and ensuring proper utilization of ingredients.
- Follow standardized recipes and hotel SOPs.
- Ensure proper storage, labeling,



and rotation of food items using FIFO/FEFO methods.
- Maintain high standards of cleanliness, personal hygiene, and food safety.
- Comply with HACCP and hotel hygiene standards.
- Coordinate with the Sous Chef and other kitchen sections during busy service periods.
- Monitor kitchen equipment and report maintenance issues promptly.
- Assist in developing current South Indian dishes and menu improvements when required.
- Ensure timely completion of orders during breakfast, lunch, dinner, and banquet services.
