About the Role: Any Time Fish is looking for an experienced Purchase Manager with a strong background in the restaurant industry to handle our daily procurement. Since we specialize in premium, authentic Bengali cuisine, sourcing the highest quality raw materials especially fresh fish and seafood is vital to our success. The ideal candidate will have extensive local market knowledge, excellent negotiation skills, and a keen eye for quality.

Key Responsibilities:

- Raw Material Sourcing: Procure daily fresh ingredients including a variety of fish, meat, poultry, seasonal vegetables, spices, and packaging materials for all cloud kitchen outlets.
- Fish & Seafood Expertise: Utilize deep knowledge of the local fish markets to source the best quality catches at the most competitive daily rates.
- Vendor Management: Identify, negotiate, and build strong relationships with reliable local vendors, wholesalers, and market suppliers.
- Cost Control: Monitor market fluctuations, negotiate favorable pricing, and ensure all purchasing remains within the allocated budget without compromising on quality.
- Quality Assurance:



Inspect all incoming raw materials to ensure they meet our strict freshness and quality standards before dispatching them to the kitchens.
- Coordination: Work directly with the F&B; Manager and Head Cooks to fulfill daily indent requirements and manage stock levels effectively.

Requirements:

- Minimum 3-5 years of proven experience as a Purchase Manager or Procurement Executive specifically within the restaurant, hotel, or catering industry.
- Mandatory: Extensive knowledge of Kolkata’s local wholesale markets, with specialized expertise in buying fresh fish and seafood.
- Robust negotiation and networking skills.
- Honesty, transparency, and high ethical standards in all financial and purchasing transactions.
- Willingness to start early morning shifts for daily market runs.
