Chef – Boro Ethnic & Fast Food Restaurant

About the Role
We are looking for a skilled, responsible, and passionate Chef to lead our kitchen and prepare authentic traditional Boro/ethnic cuisine, along with a variety of popular fast-food and contemporary dishes.
The ideal candidate should understand traditional cooking methods, maintain the authentic taste and presentation of Boro cuisine, and also have practical experience preparing fast food such as burgers, fried chicken, noodles, fried rice, sandwiches, momos, snacks, and other quick-service items.
Key Responsibilities
- Prepare authentic traditional Boro ethnic dishes using appropriate ingredients, spices, herbs, and traditional cooking techniques.
- Maintain the original taste, quality, and presentation of traditional Boro cuisine.
- Prepare and supervise preparation of fast-food and popular restaurant items.
- Develop and maintain standardized recipes, portion sizes, and cooking procedures.
- Ensure consistency in taste, quality, quantity, and presentation of every dish.
- Plan daily kitchen preparation according to customer demand and restaurant requirements.
- Maintain proper food hygiene, kitchen cleanliness, and sanitation standards.
- Ensure proper storage and handling of meat, fish, vegetables, spices, and other ingredients.
- Monitor freshness and quality of raw materials and report shortages or quality issues.
- Minimize food wastage through proper preparation, storage, and portion control.
- Coordinate with kitchen helpers and other staff to ensure smooth kitchen operations.
- Manage cooking during busy hours while maintaining food quality and service speed.
- Assist in creating new Boro ethnic dishes and fast-food items for the restaurant menu.
- Maintain proper use and cleanliness of kitchen equipment and utensils.
- Follow food safety and workplace safety procedures.
- Control food costs through proper portioning and efficient use of ingredients.
- Maintain cleanliness and organization of workstations throughout the shift.
Required Skills & Knowledge
Traditional / Ethnic Cuisine
- Good knowledge of traditional Boro cuisine and indigenous cooking methods.
- Ability to prepare traditional meat, fish, vegetable, rice, bamboo-shoot, fermented, smoked, grilled, and other ethnic preparations.
- Knowledge of locally available ingredients, herbs, spices, and traditional cooking techniques.
- Ability to preserve authentic taste while maintaining modern restaurant hygiene and presentation standards.
Fast Food & Contemporary Cooking
- Knowledge of preparing burgers, sandwiches, fried chicken, French fries, noodles, fried rice, momos, rolls, snacks, and similar rapid-food items.
- Basic knowledge of sauces, marinades, seasonings, frying, grilling, and other quick-service cooking techniques.
- Ability to prepare food quickly and consistently during peak business hours.
Qualifications & Experience
- Minimum 2–3 years of relevant cooking experience preferred.
- Experience in an ethnic, traditional, multi-cuisine, or fast-food restaurant will be an advantage.
- Practical knowledge of Boro/Assamese traditional cuisine is highly preferred.
- Formal culinary training is an advantage but practical cooking skills and experience are more important.
- Ability to work independently and as part of a kitchen team.

Performance Expectations The Chef will be expected to maintain:
Authentic Taste + Consistent Quality + Fast Service + Hygiene + Cost Control The chef should take ownership of the kitchen and ensure that every customer receives food that reflects the restaurant’s commitment to authentic Boro ethnic cuisine while also offering modern fast-food choices.
Salary & Benefits
Salary: ₹10000 to 15000 per month, depending on experience and skill.
