Role & responsibilities
Whyte Farms is looking for a hands-on Dairy Quality & Food Safety Officer to establish and maintain quality and food-safety controls across its dairy operationsfrom milk procurement and receiving through processing, packaging, cold storage and final dispatch.
The role covers raw-milk testing, adulteration detection, laboratory operations, product testing, hygiene, food safety, supplier quality, documentation, compliance and corrective actions.
The officer will work closely with the milk procurement, production, stores, maintenance, packaging and management teams to ensure that raw materials and finished products consistently meet defined quality and safety standards.
Milk Procurement and Receiving Quality
- Establish and implement quality standards for incoming raw milk.
- Inspect and test milk received from farmers, collection centres, suppliers and tankers.
- Conduct routine testing for fat, SNF, density, protein, acidity, pH, temperature and organoleptic quality.
- Test for added water, common adulterants and possible contamination.
- Verify supplier-wise and batch-wise milk quality.
- Identify and segregate milk that does not meet the approved specifications.
- Recommend acceptance, rejection or further investigation of doubtful milk.
- Maintain supplier-wise quality records and identify recurring issues.
• Work with the procurement team to improve milk quality at the source.
External Testing and Residue Monitoring
- Develop a risk-based product and raw-material testing programme.
- Coordinate testing through recognised or NABL-accredited external laboratories wherever required.
- Monitor antibiotic and other applicable residue-testing requirements.
- Ensure correct sampling, sealing, labelling, preservation and traceability.
• Escalate suspected contamination or residue cases immediately.
In-Process Quality Control
- Define and monitor critical quality parameters at each processing stage.
- Conduct checks during pasteurisation, homogenisation, fermentation, chilling, filling and packaging, as applicable.
- Monitor temperature, time, pH, acidity, fat, SNF, total solids, moisture and other product-specific parameters.
• Document process deviations and coordinate root-cause analysis and corrective action with the production team.
Finished-Product Quality
- Conduct physical, chemical, microbiological and sensory evaluation of finished dairy products.
- Support quality assurance for milk, flavoured milk, lassi, buttermilk, curd, yoghurt, paneer, chhana, butter, ghee, cheese, milk powder, ice cream and dairy sweets, as applicable.
• Ensure that products meet approved specifications before release.
Laboratory Operations
- Take day-to-day ownership of dairy laboratory operations.
- Prepare testing schedules and ensure analyses are performed according to approved SOPs and methods.
- Ensure laboratory instruments are calibrated or verified as required.
- Maintain reagents, testing kits, glassware and other consumables.
- Monitor equipment cleanliness, preventive maintenance and breakdowns.
• Operate or supervise equipment such as milk analysers, pH meters, digital balances, centrifuges, incubators and autoclaves.
Microbiological and Hygiene Controls
- Coordinate testing for total plate count, coliforms, yeast, mould and relevant pathogens.
- Review and trend microbiological results and investigate abnormal findings.
- Monitor GMP, GHP, HACCP, sanitation and personnel-hygiene practices.
- Inspect production areas, pipelines, storage rooms, utensils, tools and cleaning systems.
- Verify pest-control and environmental-hygiene measures.
• Participate in hygiene assessments and corrective-action initiatives.
Quality Systems, Non-Conformance and CAPA
- Prepare and update quality SOPs, specifications, formats and checklists.
- Maintain raw-material, in-process and finished-product quality records.
- Conduct periodic compliance checks and identify system gaps.
- Raise non-conformance reports and place affected material or products on HOLD.
- Participate in root-cause analysis and define corrective and preventive actions.
• Track CAPA items until satisfactory closure and verify their effectiveness.
Batch Release and Traceability
- Review batch records, test results, packaging details and production documentation before product release.
- Confirm end-to-end traceability for raw milk, ingredients, processing batches and finished products.
• Release products only according to the companys authorised quality process.
Supplier and Vendor Quality
- Participate in supplier evaluation, approval and quality audits.
- Track supplier-quality performance and provide technical feedback.
• Support quality evaluation of ingredients, packaging materials and processing inputs.
Customer Complaints
- Investigate complaints concerning taste, smell, texture, spoilage, leakage, contamination or packaging.
- Conduct root-cause analysis and recommend corrective and preventive measures.
• Maintain complaint records and identify recurring quality trends.
Regulatory Compliance and Reporting
- Ensure alignment with applicable FSSAI requirements and Indian food-safety regulations.
- Coordinate regulatory, customer and certification audits.
- Maintain records of licences, test reports, audit findings and compliance actions.
• Prepare daily, weekly and monthly quality reports for management.
Training
- Train production, procurement, packaging and sanitation teams on basic quality, hygiene and food-safety requirements. • Build awareness of GMP, GHP, HACCP, contamination prevention and product-handling practices.
Preferred candidate profile
- B.Sc. or M.Sc. in Dairy Technology, Food Technology, Food Science, Microbiology, Chemistry, Biotechnology or a related discipline.
- Relevant experience in dairy quality assurance, quality control or food safety.
- Robust knowledge of raw-milk testing, adulteration detection and dairy-processing controls.
- Working knowledge of FSSAI requirements, GMP, GHP, HACCP and CAPA.
- Experience in dairy laboratory operations and testing equipment.
- Good analytical, documentation and problem-solving capabilities.
- Able to work independently and coordinate effectively with operational teams.
• Willing to be based at or travel regularly to Tijara, Rajasthan.
