- Qualification:_ _Diploma / Bachelor’s degree in Food Technology, Bakery & Confectionery, Hotel Management, Production Management, or a related discipline_
- Certifications:_Food Safety & Hygiene Certification (FSSAI Level 2 or 3 preferred), HACCP / GMP / ISO 22000 (preferred)._
- Experience:_ _Minimum 2_+ years_in (bakery/patisserie/food production) operations in a centralized kitchen or manufacturing setup._
- Job Profile:_ _The _Production Lead_ _is responsible for overseeing daily bakery and patisserie production operations, ensuring adherence to quality, food safety, efficiency, and delivery timelines. This role involves leading production teams, optimizing processes, maintaining SOP compliance, and collaborating with planning, QA, and supply chain teams to support Harley’s Fine Baking’s premium product standards and growth._Responsibilities:_
- _Lead and supervise end-to-end production activities across bakery and patisserie lines._




- _Plan daily and weekly production schedules based on demand forecasts and dispatch plans._
- _Ensure adherence to product recipes, batch accuracy, and quality benchmarks._
- _Monitor production efficiency, yield, wastage, and downtime; implement corrective actions._
- _Enforce food safety, hygiene, and sanitation standards across the production floor._
- _Manage and mentor production staff, including bakers, assistants, and supervisors._
- _Coordinate with Quality, Supply Chain, and Warehouse teams for raw material availability._
- _Ensure proper equipment usage, preventive maintenance coordination, and safety compliance._
- _Maintain production records, batch logs, and compliance documentation._
- _Support current product trials, scale-ups, and process improvements. _
