About the Role
Spoon is looking for an experienced and passionate South Indian Chef to join our kitchen team.
We are looking for someone who has robust hands-on experience in authentic South Indian cuisine, particularly dosa, idli, vada, sambar and chutneys, and who can maintain consistent taste, quality and presentation during daily operations.
Key Responsibilities
- Prepare authentic and high-quality South Indian dishes.
- Prepare dosa, idli, medu vada, uttapam, sambar, rasam and different chutneys.
- Prepare and manage dosa/idli batter, including proper fermentation.
- Maintain consistency in taste, texture, portion size and presentation.
- Handle tawa/dosa preparation efficiently during busy hours.
- Follow standardized recipes and kitchen SOPs.
- Maintain cleanliness, hygiene and food-safety standards.
- Ensure proper storage and handling of ingredients.
- Monitor ingredient usage and minimize food wastage.
- Maintain kitchen equipment and workstation cleanliness.
- Coordinate with other kitchen staff for smooth service.
- Assist with developing recent South Indian dishes and menu items.
- Maintain discipline and professionalism in the kitchen.
Requirements
- 2-5 years of relevant experience as a South Indian Chef/Cook.
- Strong practical knowledge of South Indian cuisine.
- Excellent dosa/tawa skills.
- Good knowledge of batter preparation and fermentation.
- Experience working in a restaurant, café,
hotel or commercial kitchen preferred.
- Ability to work during busy service hours.
- Good hygiene and food-safety practices.
- Ability to follow recipes and maintain consistent taste.
- Team player with a positive and professional attitude.
Hotel Management/Culinary qualification is preferred but not mandatory for candidates with strong hands-on experience.
Practical Cooking Trial
Shortlisted candidates will be required to attend a practical cooking trial.
The trial may include:
- Masala Dosa
- Plain Dosa
- Idli
- Medu Vada
- Sambar
- Coconut Chutney
- Tomato Chutney
Selection will be based on taste, consistency, speed, hygiene, presentation and ability to follow standardized recipes.
