Position Title: Shift Incharge
Department: Restaurant Operations
Reports To: Restaurant Manager / Branch General Manager
Employment Type: Full time (Rotational Shifts)
Job Purpose The Shift Incharge is responsible for managing the day-to-day operational workflow during their assigned shift. This includes ensuring rapid table turnaround, maintaining high standards for authentic South Indian menu items, overseeing kitchen and service coordination, managing billing and cash operations, and delivering an exceptional guest experience.
Key Duties & Responsibilities
1. Floor & Operations Management
- Oversee opening, operational, and closing shift checklists across dining, kitchen, and parcel counters.
- Manage customer seating queues during peak hours (especially morning breakfast and evening tiffin hours) to optimize table turnover.
- Coordinate seamlessly between the Service Captains/Waiters and the Kitchen Master/Cooks to maintain swift order delivery times.
- Monitor takeaway, counter sales, and online delivery platforms (e.g., Swiggy, Zomato) to ensure proper packing and timely dispatch.
2. Quality & Hygiene Control
- Ensure strict adherence to food safety, sanitation, and FSSAI standards across all service, kitchen, and dishwashing areas.
- Conduct daily checks on item quality, consistency, and presentation (e.g., crispness of dosas, temperature of sambar/chutneys, freshness of filter coffee).
- Supervise personal hygiene and grooming standards of all staff members (clean uniforms, hairnets, aprons).
3. Staff Supervision & Shift Scheduling
- Conduct daily pre-shift huddles to brief staff on daily targets, duty allocations, and menu availability.
- Track shift attendance,
punctuality, and break rotations to ensure adequate coverage during rush hours.
- Provide continuous on-the-job training and guidance to service staff, parcel helpers, and kitchen stewards.
4. Cash & Billing Reconciliation
- Monitor POS (Point of Sale) billing counters for speed and accuracy.
- Conduct end-of-shift cash drawer balancing, verify card/UPI settlements, and audit bill voiding or discount entries.
- Hand over accurate daily sales reports and cash collections to the management or incoming shift lead.
5. Guest Relations & Complaint Handling
- Maintain an active presence on the restaurant floor to greet guests and gather direct feedback.
- Resolve guest complaints regarding service delays, food quality, or order errors promptly and tactfully.
Qualifications & Requirements
Education: Any Graduate / Diploma or equivalent experience.
Experience: 24 years of operational/supervisory experience in high-volume South Indian restaurants, QSR chains, or casual dining establishments.
Core Competencies:
- Knowledge of South Indian food service dynamics (fast-paced breakfast & tiffin operations).
- Hands-on experience with POS software and basic Excel/cash handling procedures.
- Strong leadership, communication, and floor-management skills.
- Proficiency in local language(s) and basic English.
- Ability to thrive in a fast-paced environment and handle peak-hour pressure.
