DCDP – Continental

Location- Current Alipore, Kolkata

Salary- ₹13,000 to ₹21,000/month

Key Responsibilities

Mise en Place & Prep: Leading the preparation, chopping, measuring, and organizing of all continental ingredients before the restaurant opens.

Cooking & Execution: Handling core continental cooking techniques like grilling steaks, roasting meats, sautéing vegetables, tossing pastas, making classic sauces (like Béchamel or Velouté), and baking.

Station Management: Assisting the CDP in managing inventory, checking ingredient freshness, enforcing FIFO (First In, First Out) rotation, and minimizing food waste.

Supervision: Overseeing junior Commis chefs and trainees, ensuring they follow recipes accurately and keep the workstation clean.

Food Safety: Maintaining strict compliance with health, sanitation, and food safety standards (such as HACCP or FSSAI regulations).
