Job Description — F&B; Captain

Role Summary

Suburban Residency is seeking an experienced and service-oriented F&B; Captain to supervise daily food and beverage service across our restaurants, bar and lounge, room service, and banquet operations.

The Captain will lead the assigned service team during each shift, coordinate closely with the kitchen and bar, ensure accurate billing, and provide guests with professional, efficient, and personalized service.

Key ResponsibilitiesGuest Service

- Welcome guests warmly and assist with seating, menu presentation, and order taking.
- Explain menu items, daily specials, beverages, and available promotions.
- Recommend suitable dishes and beverages based on guest preferences.
- Check guest satisfaction during service and address concerns immediately.
- Escalate serious complaints to the F&B; Manager or duty manager.
- Ensure all guests receive courteous, attentive, and timely service.

Restaurant and Bar Operations

- Supervise waiters, stewards, and trainees during assigned shifts.
- Conduct pre-shift briefings and allocate service stations.
- Ensure tables, service stations, restaurant areas, and bar areas are properly prepared before opening.
- Coordinate food and beverage orders with the kitchen and bar.
- Monitor preparation and service times to prevent unnecessary delays.
- Ensure every food and beverage item leaving the kitchen or bar is properly entered and billed through the POS system.
- Verify KOTs/BOTs, bills, discounts, voids, complimentary items, and payment settlements according to company policy.
- Support opening, shift handover, and closing procedures.

Banquets and Events

- Review banquet event orders, menus, timings, layouts, and guest requirements.
- Supervise banquet setup, food service, beverage service, and clearing.
- Coordinate with the kitchen, housekeeping, maintenance, security, and front office when required.
- Ensure buffet counters, service stations, tables, chairs, linen, cutlery, and glassware are properly arranged.
- Monitor function schedules and provide smooth service throughout the event.




- Report breakages, shortages, additional requirements, and client feedback.

Room Service

- Ensure room-service orders are accurately recorded, prepared, delivered, and billed.
- Confirm correct tray or trolley setup, condiments, cutlery, and presentation.
- Monitor delivery and clearance times.
- Coordinate with the front office for guest requests and special arrangements.

Team Supervision

- Maintain discipline, grooming, hygiene, punctuality, and professional conduct among service staff.
- Train employees in menu knowledge, service standards, suggestive selling, POS use, hygiene, and guest interaction.
- Guide new employees and monitor their on-the-job performance.
- Encourage teamwork between service, kitchen, bar, banquet, and support departments.
- Report attendance, performance, or disciplinary issues to the F&B; Manager.

Inventory and Cost Control

- Monitor the proper use of crockery, cutlery, glassware, linen, and service equipment.
- Record and report breakage, wastage, spoilage, and shortages.
- Assist with daily and periodic inventory checks.
- Ensure controlled issuance and proper storage of operating supplies.
- Prevent unauthorized consumption, unbilled service, and avoidable wastage.
- Support food and beverage cost-control initiatives.

Hygiene, Safety and Compliance

- Ensure compliance with food-safety, sanitation, and personal-hygiene standards.
- Maintain clean tables, service stations, equipment, and guest areas.
- Follow responsible alcohol-service procedures and applicable licensing requirements.
- Ensure liquor is served only according to authorized procedures and properly recorded in the POS.
- Report safety hazards, equipment defects, maintenance concerns, or suspicious activity promptly.
- Follow fire-safety, emergency, and hotel security procedures.

Daily Non-Negotiables

- Complete the pre-shift briefing and station allocation.
- Verify restaurant, bar,



banquet, or room-service readiness.
- Maintain proper grooming and service standards throughout the shift.
- Ensure every item served is entered and billed through the POS.
- Check guest satisfaction and resolve concerns promptly.
- Record wastage, breakage, complimentary items, discounts, and voids.
- Complete closing checks, settlement verification, and shift handover.
- Submit an accurate shift report to the F&B; Manager.

Qualifications and Experience

- Higher Secondary, Diploma, or Degree in Hotel Management or Hospitality preferred.
- Minimum 2–4 years of F&B; service experience, including experience as a senior steward or captain.
- Experience in restaurant, bar, banquet, and room-service operations is preferred.
- Working knowledge of POS billing systems and cashless payment methods.
- Positive knowledge of food, beverages, basic bar service, and service etiquette.
- Ability to communicate effectively in Malayalam and English; knowledge of Hindi is an advantage.
- Willingness to work rotational shifts, weekends, holidays, and extended hours during events.
